Flax Bread

This flax bread is a real treat with sorghum and butter! In case you are wondering what the white stuff is in the bowl it's  homemade cottage cheese with green onions. (;

 
Real quick before I get to my Friday order sheets, I wanted to share a flax bread recipe that Lois Ann (10) made for lunch today.  It's that easy!! 

This bread is made with ground flax meal instead of wheat flour.  It reminds me a little of corn bread or pizza dough.  Often, you find the textures of the gluten free breads so gritty from the rice flour or so starchy from the starchy substitutes that it's hard to get excited about eating them.  When I came across this recipe on the internet it caught my interest because of the ground flax and no wheat or starch flours - so I thought I'd give it a try... and we all loved it! ((even my plain, salt & pepper, meat and potato eater, Brad!!))   The texture is real spongy (that's what I was trying to bring out in the second photo, but it didn't work too well).  This recipe is also very versatile.  I've made it plain and with organic pizza seasoning and Parmesan cheese and it tasted like pizza!  I would recommend making it plain for the first time and then let your imagination run wild with all the different spices and fun things you can add to it. Hope you enjoy it as much as we do!! 



Flax Bread
1/3 cup sunflower oil  (I use melted butter)
½ cup water
1 tsp salt
1 Tablespoon baking powder
2 packets Nutrivia (you can substitute with maple syrup or coconut sugar)
5 eggs, well beaten
2 cups flax meal/flour

Preheat oven to 350 degrees
In large bowl add, flax, sweetener, salt, baking powder and mix well.
Then add; oil, water and eggs; mix until well combined.
Let set for 2-4 minutes.
Spread ½ inch thick on oiled parchment paper and bake for 18 – 20 minutes.
